Another easy vegan dinner ready in under 30 minutes!  I love the flavors in the Thai seasonings along with the crispiness of the tofu.  Add green onions or edamame to add a pop of color.  Serve it over rice or it on on it’s own-either way it’s delicious!

Thai-Inspired Tofu

Serves: 4 servings
2 tsp. sesame oil 2 tsp. coconut oil 1 lb. super-firm sprouted tofu, cut into 1" cubes ½ red onion, diced (or use green onions for color) 5-7 baby bell peppers, all colors, sliced 1 Tb. Thai seasoning: combination of lemongrass, ginger, cilantro and chili pepper (in one of those amazing squeeze-y things!) 1 tsp. minced garlic 2 tsp. soy sauce pinch of salt parsley for garnish: optional
  • Heat both oils in a large nonstick sauté pan over medium heat. Toss in tofu and brown on all sides for 3-5 minutes, then add onions and peppers.
  • Continue to stir over medium heat and add Thai seasoning, garlic and salt, cooking for 5-7 more minutes or until tofu is crisp. Add soy sauce, toss and remove from heat.
  • Serve immediately as is or over brown rice. Garnish with optional parsley.
  • NOTE: Gently press liquid out of tofu before slicing.
