Another easy vegan dinner ready in under 30 minutes! I love the flavors in the Thai seasonings along with the crispiness of the tofu. Add green onions or edamame to add a pop of color. Serve it over rice or it on on it’s own-either way it’s delicious!
- Heat both oils in a large nonstick sauté pan over medium heat. Toss in tofu and brown on all sides for 3-5 minutes, then add onions and peppers.
- Continue to stir over medium heat and add Thai seasoning, garlic and salt, cooking for 5-7 more minutes or until tofu is crisp. Add soy sauce, toss and remove from heat.
- Serve immediately as is or over brown rice. Garnish with optional parsley.
- NOTE: Gently press liquid out of tofu before slicing.
