Sneaky Mashed Potatoes
A great way to add vegetables into a picky eaters diet. My oldest daughter doesn't like mashed potatoes, so I sneak veggies into tomato sauce instead.
Basic
Potatoes
Vegan margarine
salt and pepper
soy milk
add ins:
sweet potato
carrot
cauliflower
Brocolli
topping:
vegan cheese or parmesian cheese (optional)
Cook potatoes and other vegetables in boiling water until tender.
Strain. Put into mixing bowl. Mash or mix with a mixer until smooth. Add in butter and milk until potatoes reach desired consistency.
