One Minute Vegan Brownies In A Mug



For those chocolate cravings when you don’t want to wait for anything to bake in the oven-this one’s for you!  Actually, this recipe was a happy accident and the more I made it the more I loved it and thought I MUST share it with you.

It cooks up in the microwave in one minute-no lie!  Although, I must confess that I sometimes cook it for half that time to allow for some oozy-gooey-ness to come through.  It’s moist, warm and totally hits the spot and the best part is that since it’s vegan, you can lick the batter!

One Minute Vegan Brownies In A Mug

Serves: 1 serving
  • 2 Tb. all-purpose flour
  • 2 Tb. sugar (coconut palm)
  • 1 Tb. unsweetened cocoa powder
  • 1 Tb. non-dairy milk
  • 2 Tb. hot water
  • ¼ tsp. cooking oil
  • 1 scant dash salt
  1. Mix dry ingredients directly in the mug, then mix in wet ingredients until smooth.
  2. Microwave 1 minute. Let cool slightly and eat while warm.
  3. Optional: add crushed walnuts or a dash of cinnamon or even sprinkle with powdered sugar
NOTE:  I tried it in a ramekin but thought it was a bit too dry.  Somehow, the shape of a regular/smallish sized coffee mug works just right to keep it moist enough.

  1. love this recipe! mine came out a little spongy and gummy but I think thats because I over cooked it. topped mine with some vegan caramel chocolate, soo good like that! perfect portion control too xx

  2. Having tried so many other microwave brownies, this is truly the best recipe I’ve found so far. I always add a little bit of peanut butter and some cinnamon for an extra little something. Thank you! Xx

  3. Tried these, used earth balance butter replacement instead of 2 tbsp water, and they were INCREDIBLE. Super moist, super dope.

    Also used vanilla almond milk as my milk, if you want to try to replicate the ones I got.

  4. I used millet flour, a fairly small amount of stevia, added some vegan chocolate chunks and freeze dried raspberries, then put two tablespoons of coconut ice cream on top… It was so good! Usually I find mug brownies are too sweet, so I’m glad I only used a small amount of stevia. I am currently trying to talk myself out of making a second one…. <3
