Do you ever get stuck in a rut by buying the same ol’ grocery items and cooking the same ol’ meals? Me too. But my kids keep me on my toes! Whenever we go shopping together, they’ll grab some random item and ask if we can buy it. Sometimes I say yes, sometimes no. It all depends on my mood..and my budget. I’m sure you can relate! Well the latest such item brought to my shopping cart was a jar of poppy seeds. I am a seed lover because I know how jam-packed with nutrients those little guys are. But I have never, ever purchased or cooked with poppy seeds before! Of course, I said yes.
So here’s what I learned about these crazy little black seeds:
- these seeds are rich in oleic and linoleic acids. (Oleic acid helps lower LDL or “bad cholesterol” and increase HDL or “good cholesterol”)
- they are loaded with minerals like iron, copper, calcium, potassium, manganese, zinc and magnesium
- they contain fiber (i.e., helps keep things moving people!)
- they’re a great source of B-complex vitamins (like thiamin, pantothenic acid, pyridoxine, riboflavin, niacin, and folic acid, just to name a few!) B-complex vitamins help metabolize fat and carbs.
Pretty cool, huh? I thought so too. Anyway, my kids and I are lemon-lovers. I think it’s the West Coast in us as we used to have lemon trees in our yard (now we live in Nebraska…no lemon trees here). We came up with a super quick, yummy recipe that they eat for breakfasts or snacks. Perfect for lunchboxes too! Make a double batch to last all week.
Not a muffin-eater? Try poppy seeds sprinkled on your salads, mixed with honey or agave on a piece of toast, or for a bit of crunch in a fruit salad or coleslaw. Or plant them in your yard! Get creative and have fun with this amazing seed!
- ½ C. Earth Balance butter, room temperature
- ⅔ C. sugar
- ½ C. unsweetened applesauce
- 1⅓ C. all-purpose flour
- ½ tsp. baking soda
- 1 tsp. baking powder
- 2 Tb. poppyseeds
- ¼ tsp. sea salt
- ½ C. non-dairy yogurt (try vanilla or lemon flavor!)
- 2-3 Tb. fresh lemon juice
- zest of 1 lemon (make sure it's organic!)
- 1 tsp. pure vanilla extract
- Preheat oven 350F.
- Spray muffin tin with non-stick spray or line with paper cups.
- Cream together butter, sugar and applesauce in medium mixing bowl until smooth.
- On low speed or by hand, mix in remaining ingredients in the order listed. Do not overmix.
- Spread the mixture into prepared muffin tin ⅔ of the way full.
- Bake for 20-25 minutes or until toothpick inserted in the center comes out clean.
- Variations: add shredded coconut or crushed walnuts or chocolate chips!
