Great Great Grandmother Sugar Cookies

This recipe is the oldest in my family. It belonged to my great grandmother, Alberta Matheson, who is my daughters great great grandmother. I've included vegetarian alternatives to the animal product ingredients.

Blend together:
1/2 cup of shortening
1/2 tsp salt
1 tsp grated lemon rind
1 cup sugar

Beat in:
1 egg, unbeaten (or 1 egg equivalent like EnerG Egg replacer)
2 tbsp milk (or soy milk)

Add:
2 cups flour (cake or pastry flour works best)
1tsp baking powder
1/2 tsp baking soda

Drop by rounded teaspoons on lightly greased baking sheet. Grease bottom of a glass. Dip glass in sogar and flatten each cookie. Sprinkle with nutmeg.

OR: Roll on lightly floured board, cut out with cookie cutters, decorate when cooled.

Bake at 400F for 8 to 10 minutes.
