Fiesta Avocado Bowl

I love this simple yet festive dish because it’s seriously easy to make.  There’s no cooking involved-simply place it under the broiler for a few minutes and viola!  You’re all set.  Who doesn’t love fast food?
Fiesta Avocado Bowl
makes 4 “bowls”
2 large ripe avocados
1 Tb. diced red onion
3/4 C. cooked black beans
1/4 tsp. ground cumin
1/4 tsp. garlic powder
1/4 C. diced tomatoes
2 Tb. Follow Your Heart Vegan Gourmet Shreds, Fiesta Blend
1 lime, cut into 4 wedges

1.  Turn the oven on to broil.  
2.  Slice avocados in half length-wise and discard the pits. Use a sharp knife to carefully cut “squares” into the avocados, being careful not to go through the skin.  Use a spoon to gently scoop out part of the center to make room for the filling. 
3.  In a small bowl, stir together onion, beans, cumin, garlic powder and tomatoes.  Divide the mixture up evenly between the 4 avocado halves, placing the filling into the center.  Sprinkle with cheese.  
4.  Place avocados onto an ungreased baking sheet and broil for about 3-5 minutes, or until cheese turns  a light brown color in spots.  Remove from oven.  Squeeze fresh lime juice on top and serve.
