EZ Tofu Press WINNER ANNOUNCED & A Creamy Chai Nog Smoothie

Thanks so much for entering the EZ Tofu Press contest!  One winner was chosen at random and is announced below.  Congratulations!
I’ve always had a thing for smoothies, even back when I only had my $30 Target blender (which I tested the limits of!).  But now that I’ve upgraded to a Vitamix I can really get crazy in the kitchen!  I love that smoothies easily hide foods that many kids (my own included) claim they don’t like, from avocados to spinach to hemp seeds and oats.  Talk about some veggie power!  
As most of the US is under a heat wave right now I’d assume a nice cold, frothy smoothie is in order.  For you Southern Hemisphere peeps, just get a whiff of the Pumpkin Pie Spice and pretend it’s a cozy drink.  😉
This creamy, cool Chai Nog Smoothie is the perfect treat to feel refreshed and relaxed.  I like it as a late night sweet treat and eat it with a spoon!  Sprinkle a little hemp seeds on top and it’s a meal in itself!

                               

Creamy Chai Nog
makes ~6 servings (cups)

Ingredients:
1 avocado, pitted & peeled
1 frozen banana, broken into 3 chunks
1 (400ml) can light coconut milk
3/4 C. non-dairy milk
6 non-dairy milk ice cubes
1/3 C. pure maple syrup
1 tsp. pumpkin pie spice (cinnamon, ginger, lemon peel, nutmeg, cloves, cardamom)
1/2 tsp. ground cinnamon
1 tsp. pure vanilla extract

Directions:
1.  In a high speed blender, add avocado, banana, coconut milk, non-dairy milk and ice cubes.  Process on high until smooth, then add in remaining ingredients (syrup, pumpkin pie spice, cinnamon and vanilla), blending until completely smooth.  Serve chilled.

So refreshing and creamy!
