Easy Veggie Chili
Veggie Chili - makes enough for a family (6-8 portions)
Our toddler loves this recipe, and it's so easy that pretty much the hardest part is cooking the onions. You can also make it in a slow cooker if you want.
Ingredients:
1 - 2 onions, chopped
1 can of beans in tomato sauce, chili flavour
1 can of other beans, like kidney beans
1 package veggie ground round, Mexican flavour
1 large can of whole tomatoes
1 small can of tomato paste
1-2 fresh tomatoes, cubed
½ cup frozen corn
Instructions:
1.Soften onions in a large sauce pan with a bit of soil or water for a few minutes
2.Add all cans, mix and heat for 20 to 30 minutes
3.Add corn, heat an addition few minutes.
4.Serve! Great with corn bread.
