English Muffin Pizzas
An English muffin pizza can be a quick and easy recipe to make and your kids will love them.

Cook Time: 5 minutes
Ingredients:
1 Whole Wheat English muffin
A handful (about 1/3 cup) of shredded soy cheese
1/2 sliced tomato or 2 Tablespoons of tomato/pizza sauce
Broccoli, mushrooms, veggie pepperoni, pineapple or other toppings (optional)
A pinch of fresh basil (optional)
Preparation:
After slicing the English muffin, next place the tomatoes or sauce and then the cheese on each half of the English muffin.
Top your 'pizza' with a few veggie pepperoni slices or other favorite pizza toppings.
Place your completed 'pizza' on an aluminum foil-lined baking sheet in an oven preheated to 350 F or in a toaster oven.
Bake for 5 to 10 minutes, depending on how crispy your child likes his or her pizza, or until the cheese is a golden brown color.

It can also be fun to let kids choose their own toppings and put the English muffin pizza together by themselves.
You can alternate toppings and also use a sliced bagel, mini pita or even Phil's Quick Pizza Dough pre-made and unfrozen.
