Easy As Pie Apple Pie

Fall is in the air!  And that means apple season…especially in our backyard.  We have a seemingly endless supply of tart green apples; perfect for apple pie!  I love to cook and bake but I haven’t had the time to do so properly so that’s why this Easy As Pie Apple Pie recipe is right up my alley.

Feel free to use whatever color apples you like, of course!

Easy As Pie Apple Pie
Serves: 1 (9") pie
 
Ingredients
  • FOR THE CRUST:
  • 1½ cups all-purpose flour
  • pinch of salt
  • 1 tsp. sugar
  • 8 Tb. cold Earth Balance buttery sticks (1 stick), cut into small pieces
  • 4 to 5 Tb. ice water
  • FOR THE FILLING:
  • 4-5 medium apples, sliced thin
  • ½ stick Earth Balance buttery sticks
  • ½ C. sugar (I used coconut palm)
  • 1 tsp. cinnamon
  • ¼ tsp. ground nutmeg
Instructions
  1. FOR THE CRUST:
  2. In a large bowl, combine flour, salt, and sugar. Use a fork to gently toss together.
  3. Use a pastry cutter to "cut" the butter into the dry ingredients until pea-sized pieces form.
  4. Drizzle in ice water 1 Tb. at a time until you reach 4 Tb. Use your hands to knead the dough until water is absorbed and a dough ball forms. (You may need that last Tb. of water but I usually don't.)
  5. Form a ball and pat it flat, then cover with plastic wrap and store in the 'fridge for 20-30 minutes.
  6. Next, spray a 9" pie pan with non-stick spray. Lightly flour a flat surface and a rolling pin. Roll out the chilled dough until ~1/4" thick and carefully transfer to pie pan.
  7. FOR THE FILLING:
  8. Preheat oven to 375 F.
  9. Melt butter in a medium sauce pan over low heat. Stir in sugar, cinnamon and nutmeg until well combined. Remove from heat.
  10. Evenly spread apples onto pie crust in pie pan, making sure it's full and even.
  11. Pour the melted butter mixture evenly over the top and bake for 20-25 minutes, or until the crust is a slight golden brown.
