Deli Wraps with Bean and Corn Salad

I love using Field Roast deli slices for sandwiches and wraps.  Even vegans and vegetarians miss that “meaty” flavor sometimes (at least I’ll admit I do!).  The Bean and Corn Salad recipe below is great on it’s own or all wrapped up like in this recipe.  Or try the Deli Slices on a vegan grilled cheese sandwich…heaven!  
 
Deli Wraps
makes 4 halves
Ingredients:
2 flour tortillas
2 Tb. hummus or vegan mayonnaise, divided
6 slices Field Roast Deli Slices, divided
2 handfuls fresh baby spinach, divided
1 1/4 C. Bean and Corn Salad (see recipe below)
Directions:
1.  Lay each tortilla flat.  Spread entire tortilla (each) with 1 Tb. each of hummus or vegan mayo.
2.  Layer on the spinach leaves down the middle, then the Deli Slices.
3.  Top with an even amount of Bean and Corn Salad down the center.
4.  To roll, gently fold in both ends slightly, then start at one end and roll tightly as you go.  Slice in half diagonally.

 

Just look at the colors in this dish!  It’s a feast for the eyes and the tummy!  
Bean and Corn Salad
makes ~6 servings
Ingredients:
2 Tb. balsamic vinegar
1 Tb. extra-virgin olive oil
1 Tb. fresh lime juice
1/3 C. fresh cilantro, roughly chopped
1 tsp. garlic powder
1 tsp. ground oregano
1/4 tsp. sea salt
1/4 tsp. ground black pepper
4 C. black beans, rinsed and drained
2 C. fresh corn kernels (non-gmo)
1 red bell pepper, diced
1/2 C. scallions, diced
Directions:
1.  In a large bowl, mix together balsamic vinegar, olive oil, lime juice, garlic powder, oregano, salt and pepper.
2.  Add in beans, corn, peppers and scallions.  Toss well and chill, covered for two hours.  Add fresh cilantro just before serving.
