Jess's Favorite Cookies: Oatmeal Coconut and Chocolate Chip Cookies
I love chocolate. I love oats. I love coconut. So for me, these are the perfect cookies. I like them chewy and fluffy, but if you like them butterier, then feel free to add more veg. butter.
¼ - 1/3 c vegan butter (or margarine) 
¼ c white sugar
½ c brown sugar
2tsp vanilla (real is SO much better than fake)
1 egg equivalent(I Like Ener G Egg Replacer)
½ c white flour
1/2c wheat flour
2tbsp oats
½ c shredded coconut
1tsp baking powder
pinch of salt
1/2c or more chocolate chips
1/4c raisins or pecans (optional)
Mix the butter and sugars til fluffly. Add the vanilla and egg replacer and mix again.
In a separate bowl, mix together the powders and mix into the sugar mixture. Add the chocolate chips and raisins.
Roll into balls and flatten, and cook at 325F for 8-12 minutes, depending on how you like them cooked. I like them be soft so I cook them 8 to 9 minutes.
Note: In my opinion (and I hate to admit this) but this is the best recipe for eating raw batter! Yum! And no raw egg to worry about.
Makes around 15 – 20 or more depending on the size of the cookie, and whether you snack on batter.
Second Note: Try to invest in real vanilla. Yes, it's 9 dollars but it really is so much better. It took me until only last year to invest in it, and boy am I glad I did.
