Cheaters Lentil Curry
I call this "cheaters" because it uses the premixed curry cube that you buy in a package instead of loose spices. It always turns out good. Right now our 1 year old is more into this than our two year old. It’s pretty spicy!
1/2 lb (225g) protein like cooked green/brown lentils, veggie chik’n ground round, and firm tofu
2 tbsp vegetable oil
1 medium onion
1 medium potato
1 medium carrot
2 cloves garlic, minced
+ any other veggies such as green beans, spinach, or whatever you have around, this recipe doesn't need to be precise to turn out well.
1 cube vegetable stock
1 package Curry Sauce, the non liquid kind (We use Glico Curry, we don’t really taste a difference from Mild to Hot, so we get either, it tends to be near the asian food, near the coconut milk, at our grocer)
Cut all the ingredients into bite size pieces.
In a large skillet, stir fry the onions with oil. Add all other ingredients except vegetable stock and stir for a few minutes.
Add two cups of water to the skillet and bring to a boil, add vegetable stock. Cook in medium-low heat with a lid for 20 minutes until tender.
Remove from heat, add the curry sauce (broken into several pieces). Stir until completely melted.
Cover and set aside for 10 minutes.
Serve with brown rice.
