Butternut Squash Side Dish For Thanksgiving

It’s truly squash season here in America and with Thanksgiving coming up the flavors of this dish fit right into the season.  The sweet flavors along with the crunch of the almonds really satisfies the palette.   Try this as a side dish for your Thanksgiving feast!  
Sweet & Crunchy Butternut Squash
makes 4-6 servings
1 lb. butternut squash, cubed
2 Tb. water
3 Tb. Earth Balance butter, melted
3 Tb. agave nectar
1/2 tsp. ground nutmeg
1/2 tsp. ground cinnamon
1/4 C. raisins
1/4 C. toasted almonds (or other nut of choice)
sea salt to taste
1.  Preheat oven to 375F.  Evenly spread cubed squash onto a rimmed baking sheet.  Drizzle with 2 Tb. water and bake for 20 minutes.  
2.  Meanwhile, stir together butter, agave, nutmeg and cinnamon.  
3.  Remove butternut squash from oven and drizzle with butter mixture.  Stir gently to coat.  Sprinkle with raisins and almonds.  Bake for an additional 10 minutes.  Remove from oven, sprinkle with salt and serve.
