Banana Sandwich Bread
Excellent bread for PB&Banana Sandwiches!
This is the best idea ever, if you like PB and Banana Sandwiches. They are always a bit hit in my family.
This bread is a cross between banana bread and normal bread. It has a light banana and spice flavour. Excellent with PB, PB and fresh Bananas, margarine and wildflower honey.
Rising times are in bold for easy reference.
Gently mix:
2 cups lukewarm water
2 packages dry yeast (1 ½ tbsp)
¼ c wildflower honey or other sweetener
Then add:
½ - ¾ c milk (depending on how soft you like it, if you don’t know, go for ½)
2 bananas, mashed
Egg replacer equivalent of 2 eggs (I like Ener G Egg Replacer), beaten
2 tbsp cinnamon
Add a little bit at a time:
2 cups of unbleached all purpose flour
2 cups of whole wheat flour
Use 100 small strokes to stir this mixture together. Don’t cut through the dough.
Cover with a damp towel and let rise ~ 40 or 50 minutes in a draft free area.
Gently fold in:
1-2 tsp salt
¼ c vegan margarine, cubed as best as possible
3 cups whole wheat flour
~1 cup whole wheat flour for kneading
Knead dough on floured board for 6-10 minutes. Put back in bowl with a light spritz of oil on in. Let rest again for ~60 minutes.
Punch down 16 times with a strong fist and let rise again for another 40-50 minutes.
Take dough out and fold a few times, then form into desired shape and put into loaf pan. Let rest again 20 minutes.
Cook for 25 – 45 minutes, depending on loaf size, until knife comes out clean. Keep in mind that if you are planning to let it sit untouched, it will continue to cook inside until it cools.
