Black Bean Vegetable Soup
Alice’s delicious black bean vegetable soup, courtesy of “Nana”.
Tip: I get my kids to eat soup by sticking the ends of pieces of bread into the soup.
Black Bean Vegetable Soup
1 tbsp oil
1 onion, chopped
2 carrots, chopped
1 garlic clove
2 tsp chili powder
1 tsp cumin
4 c veggie stock
2 cans black beans, rinsed and drained
1 can lentils, rinsed and drained
1 can corn kernels
1/4 tsp pepper
1 can stewed tomatoes
Saute onion until tender. Add garlic and saute another minute. Add all other ingredients and heat on medium heat until carrots are tender.
