Aunt Sue's Chocolate Chip Cookies

Aunt Sue’s Chocolate Chip Cookies (Veganized)

A classic cookie made vegan. We secretly theorize that it came off a chocolate chip package. We loved these 20 years ago when I was little.


½ c margarinesaunt sue's cookies
½ vegan shortening
1 cup white sugar
½ c brown sugar
2 eggs (equivalent substitute like EnerG egg replacer)
1 teaspoon vanilla.
Cream together the margarine and the shortening. Mix in the sugars and beat until fluffy. Beat in the egg replacer and vanilla.

In another bowl mix together:
2 cups flour
1 tsp baking powder
½ tsp salt (optional)
Add the dry ingredients to the wet ingredients and mix well. Stir in:
2 cups of chocolate chips.

Grease a cookie sheet. Roll mix into balls. Bake for 11 minutes @ 375F. It’s best to slightly underbake them. Cool on cookie sheet for 5 minutes to finish baking. Then cool on wire racks.
Makes several dozen. Eat with a tall glass soy milk or organic milk!
