This is one of the easiest sides, especially if you’re hoping to add another veggie into your Thanksgiving menu mix! My boys love carrots raw but sometimes it’s fun to mix them up add a touch of sweetness. I love that this Agave Glazed Carrot recipe is ready in under 10 minutes! 4 ingredients, plus salt and you’re ready to eat!
Agave Glazed Carrots
makes 4-6 servings
1 lb. carrots (use baby carrots or trim large carrots…it’s cheaper!)
2 Tb. Earth Balance butter
2 Tb. agave nectar
juice of 1 lemon
sea salt to taste
1. Steam carrots until just tender (test by pricking with a toothpick or fork).
2. Meanwhile, melt butter in a medium saute pan over low-medium heat. Stir in agave and lemon juice. Add in steamed carrots and toss. Cook for 5 minutes, then season with sea salt. Serve warm.
